Scrubs & Sushi: Hospitals’ Dining Trend

Pittsburgh-area hospitals are getting new sushi/poke bowl stations at their dining facilities. Allegheny General Hospital was the first location to incorporate the latest cafeteria addition, with Wexford hospital following up and other Allegheny Health Network (AHN) hospitals likely to follow. Dave Gibson, director of culinary and retail at AHN, cited the diverse customer base that these hospital dining halls serve, saying, “I always say that we served the United Nations of People, which includes vegans, vegetarians and every nationality.” As hospitals and restaurants collaborate on patient dining, laundry operators should watch for opportunities in this area.
