HACCP: Applying it to the Laundry Process

TRSA’s monthly webinar series continued with a presentation on the Hazard Analysis and Critical Control Points (HACCP) process and applying it to your linen, uniform and facility services operation.

The webinar, titled “Applying Hazard Analysis and Critical Control Points (HACCP) to the Laundry Process,” was presented by Eric Thompson, consultant, HACCP Consulting Group (HCG). Thompson spent a large part of his career in wholesale and retail, selling meat and produce. He went on to work for the USDA regulating the meat industry. Recently retired, he joined the HCG as a consultant and has been using his experience to offer guidance to industry.

Thompson gave an overview of each of the seven HACCP principles. These include the following:

  1. Conduct hazard analysis.
  2. Determine critical control points.
  3. Establish critical limits.
  4. Establish systems to monitor critical control points.
  5. Establish corrective action for deviations from critical limits.
  6. Establish verification procedures.
  7. Establish documentation.
